Abstract

This thesis is part of the research project "Deficit irrigation for grape and wine quality cv Tempranillo in Extremadura. INIA Project RTA 2005-00038-C06-00 ", which has studied the impact of thinning and irrigation dose physiological, agronomical and oenological characteristics of berries, must and wines, during campaigns (2005-2008). Treatments are analyzed R25A and R100A (thinned vines under water regimes of 25% and 100% of ETc, respectively) and R25C and R100C (control strains under those schemes water). We have studied the effect of the both techniques on the constitution and berry composition at the time of harvest. In the wine produced was analyzed physical and chemical composition and sensory color characteristics. Furthermore, it has developed HPLC methodology necessary for the thorough study of the incidence of these treatments on the composition of phenolic substances from the wines. Finally, we have sought relationships between aspects of creation and composition of the berry with the physical and chemical characteristics and sensory properties of wine. Results indicates that both water status, including the establishment of lower levels of strain loading, fixed by thinning, affect the quantity of grapes and harvest obtained the establishment and composition of the latter. Cultural combination of both causes, in certain parameters a synergistic effect. All this had impact on the sensory profile of wines made, but results, especially thinning, are determined largely by the wine.
